BELGIAN PIE | |
4 tbsp. shortening 4 tbsp. sugar 1 egg, well beaten 1/2 tsp. salt 4 tsp. baking powder 1 c. milk Flour, enough to make soft dough For filling you may use prunes, applesauce, or pineapple Cheese Filling Topping Cream shortening, add sugar and cream until well blended. Add well beaten egg and milk and mix. Add the baking powder and salt with the first cup of flour, then continue adding flour until you have a soft dough. Divide into four parts and form each into a ball. Roll out to fit bottom of pie pan, coming up the sides a little to hold filling. CHEESE FILLING: 1 lb. cottage cheese 1/2 c. cream or canned milk 3/4 c. sugar 2 well beaten eggs Pinch of nutmeg Mix all and put through sieve on top of filling. Bake at 425 degrees for 20 to 25 minutes. |
