CHINESE SAUSAGE CASSEROLE 
1 c. rice (long cooking)
1 c. diced celery
1/2 c. chopped onion
2 pkgs. Lipton chicken noodle soup mix
1 1/2 lbs. cooked sausage, drained
2 1/2 c. water (warm)
1/2 c. bell pepper, chopped

Combine all ingredients in greased casserole. Top with slivered almonds (not toasted) if desired. Bake at 325 degrees for 45 minutes covered. Remove cover 15 minutes to brown almonds.

If extra water is needed to keep casserole moist, add when it is uncovered for browning time.

My mother won a cook-off with similar casserole, however, hers required a can of Chinese vegetables, otherwise it's not Chinese!
Sausage must be browned first and onion and celery sautéed in the fat. Do not add water.
