SPANAKOPITCKIA (SPINACH PIE) 
2 lbs. chopped spinach
1 tsp. salt
2 bunches scallions, chopped
5 eggs, slightly beaten
1/4 tsp. dill weed
1 lb. fillo dough
1 lb. melted butter
1 lb. feta cheese
1/4 tsp. pepper
2 tbsp. olive oil

Cook spinach, drain well. Combine feta cheese, onions, eggs, olive oil and salt. Brush 1 sheet of fillo dough and layer in bottom of 13 x 9 inch pan. Continue with half of the fillo dough, brushing with butter. Add spinach filling. Prepare top with rest of fillo dough. Bake at 350 degrees for 1 hour. Let stand for 15 minutes before serving.
