BUTTERMILK PANCAKES 
2 c. all-purpose flour, sifted
1 tsp. baking soda
1/2 tsp. salt
1 tbsp. sugar
2 eggs, well beaten
2 c. buttermilk (or 2 1/4 c.)
2 tbsp. shortening, melted

Sift together flour, baking soda, salt and sugar. Combine remaining ingredients, and add all at once, to flour mixture; stir just until dampened. Mixture should be lumpy. Pour batter onto a hot griddle, using a large spoon. Bake until big bubbles appear on top; turn and bake until underside is brown. Serve with butter.

You can use powder buttermilk.
