APPLE FRITTERS 
1 1/2 c. plain flour
1 tbsp. sugar
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
2 eggs, beaten
2/3 c. milk
1 tbsp. salad oil
3 c. peeled & chopped apples

Combine dry ingredients. Add eggs, milk, salad oil and apples. Stir just until moistened. Drop batter by spoonful into hot oil. Cook until golden brown, about 3 to 4 minutes, on each side. Drain and roll in powdered sugar. I add a little cinnamon to the powdered sugar. Makes about 3 dozen.
