BANANA CAKE 
2 1/2 c. sifted cake flour (reduce by 2 tbsp.)
1 2/3 c. sugar
1 1/4 tsp. baking powder
1 1/4 tsp. baking soda
1 tsp. salt
2/3 c. Crisco
2/3 c. buttermilk (2/3 c. milk - 2 tbsp. vinegar)
1 1/4 c. mashed bananas (about 3)
2 lg. egg (1/2 c.)

Sift together flour, sugar, baking powder, soda and salt. Add Crisco, buttermilk, bananas. Beat 2 minutes. Add eggs and beat 2 more minutes. Pour into prepared pans, 2 (9 inch) and bake at 350 degree oven for 30-35 minutes.

DOUBLE BOILER FROSTING:

2 egg whites
1 1/2 c. brown sugar packed firmly
1/4 tsp. cream of tartar
1/3 c. water

Place over boiling water and heat with mixer until mixture holds its shape, about 7 minutes. Fold in 1 tsp. vanilla.
