OLD FASHIONED STRAWBERRY OR
OTHER FRUIT CAKE
 
2 c. sifted flour
4 tsp. baking powder
1/2 tsp. salt
6 tbsp. sugar
1/3 c. shortening
3/4 c. milk (about)
Butter
3 c. crushed strawberries

Mix and sift dry ingredients. Cut in shortening with knife or pastry blender. Add milk gradually to make a soft dough. Turn out on lightly floured board and knead just enough to shape into smooth ball. Roll or pat lightly 1/2" thick. Cut with floured biscuit cutter and bake on large sheets or in muffin tins. Brush tops with butter and bake in hot oven, 450 degrees for 15 minutes. Split hot biscuits. Butter generously and put together again with filling of sweetened strawberries. Top with more fruit. Serve at once with plain or whipped cream. Serves 6.
