CHEESE CAKE 
15 graham crackers or 1 box vanilla cookies (crushed)
2 tbsp. flour
2 tbsp. sugar
1 tsp. cinnamon
1/3 c. melted butter

Mix thoroughly and line a large springform pan.

FILLING:

1 1/4 lbs. Ricotta cheese
1 pt. sour cream
1 c. sugar
5 egg yolks
4 tbsp. cornstarch
2 tsp. vanilla
Lg. pinch salt

Mix and beat thoroughly Ricotta cheese, sour cream, sugar, egg yolks, cornstarch, vanilla and salt. Fold in the 5 egg whites that have been stiffly beaten. Bake for 1 hour at 325 degrees. Allow to cool thoroughly. Use any of the canned glazed fruit for topping. Best when allowed to stand overnight.
