MORNING SURPRISE MUFFINS 
1 1/2 c. All Bran cereal
1 1/4 c. milk
1 1/2 c. all purpose flour
1/2 c. oat bran
1 tsp. baking soda
1 1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1/2 c. raisins
1 c. shredded carrots
1/4 c. vegetable oil
1 egg
2 tbsp. molasses
1/4 to 1/2 c. wheat germ

Preheat oven to 400 degrees. Grease 12 large muffin cups. Combine bran cereal and milk. Let stand 5 minutes or until softened.

Combine flour, sugar, baking powder, baking soda, cinnamon and salt in bowl. Add raisins. Stir together carrots, oil, egg, molasses and wheat germ. Fold into dry ingredients. Spoon into muffin tins. Bake 20 minutes. Makes 1 dozen.
