CHILES RELLENOS 
1 can whole green chiles
1/2 lb. Monterey cheese, sliced
6 eggs
1 sm. can red chile sauce
1 c. oil
Flour

Put a thin slice of cheese into each chili and roll in flour. Put aside while making a coating batter. To make batter, allow 1 egg to each 2 whole chiles and 1 tablespoon of flour to each egg. Beat egg whites until stiff, then fold in lightly beaten egg yolks followed by the flour.

Heat oil in frying pan until moderately hot. Drop floured chili in batter, lift out and put in oil to fry until brown. Flip over, fry, then drain.
