IRENE'S TOP SECRET CARROT CAKE | |
2 c. sugar 2 c. flour 2 tsp. cinnamon 1/2 tsp. salt 2 tsp. baking soda 2 tsp. vanilla extract 3/4 c. oil 3/4 c. buttermilk 2 c. grated carrots 2 c. nuts 1 box coconut 1 sm. can crushed pineapple, drained Mix together the first eight ingredients, then fold in the remaining ingredients. Be careful not to overmix. Place in a prepared 9 x 13 pan (grease and flour). Bake in a preheated 350 degree oven for 45 minutes. |
