OPIE'S CARROT-TOP CAKE 
Preheat oven to 300 degrees.

CAKE:

1 1/2 c. sugar
1 1/2 c. oil
4 eggs, beaten
2 c. self-rising flour
2 tsp. cinnamon
1 tsp. vanilla
3 c. grated carrots

FROSTING:

1/2 c. chopped nuts
1/4 c. butter
1 (8 oz.) cream cheese
1 lb. confectioners' sugar
1 tsp. vanilla
A few drops of milk

Grease and flour three 8 inch cake pans. In large bowl combine sugar, oil, eggs, flour, cinnamon, vanilla, carrots and nuts in that order. Pour into pans. Bake at 300 degrees for 30-45 minutes or until cake bounces back to touch.

Cream together the frosting ingredients. Spread on cooled cake. Serves 10-15.
