CARROT CAKE 
3 c. flour
2 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
2 c. sugar
1 1/2 c. salad oil
2 c. grated cheese
1 sm. can crushed pineapple
1/2 c. nuts
1 tsp. vanilla

Mix dry ingredients. Mix together oil and sugar. Add half of dry ingredients. Mix well and beat in carrots, pineapple and nuts. Add vanilla and rest of dry ingredients. Add eggs one at a time. Bake in greased 8x12x2 inch pan at 350 degrees.

CREAM CHEESE ICING:

1 (8 oz.) pkg. cream cheese
1/2 stick butter
1 box powdered sugar
1/2 tsp. lemon extract
1 tsp. vanilla

Melt butter and blend in with sugar, cheese and extract.
