CARROT DATE CAKE 
2 1/2 c. flour
1 sm. can crushed pineapple
2 tsp. baking soda
1/2 tsp. salt
1 c. oil
3 eggs
2 c. sugar
1 1/2 tsp. vanilla
2 c. grated carrots
1 c. chopped dates
2 tsp. cinnamon

Mix all dry ingredients together, then add remaining ingredients. Can be baked in 2 loaf pans, tube pan or oblong pan. Bake at 350 degrees for 1 hour and 15 minutes.
