CARROT DATE BREAD 
4 c. unsifted flour
2 c. whole wheat flour
2 tbsp. baking powder
1 1/2 tsp. salt
1 1/2 c. water
1/2 c. maple syrup
1/3 c. Canola oil or light olive oil
2 lg. eggs
2 loosely packed, coarsely grated carrots
1 c. pitted dates, chopped

Heat oven to 350 degrees. In large bowl, combine the flours, baking powder, and salt. In medium size bowl, beat water, maple syrup, oil and eggs until well mixed. Stir this into flour mixture until just combined. Fold in carrots and dates. Cook 55 to 60 minutes.
