CHEDDARY TOMATO FISH FILLETS 
2 tbsp. butter
1 lb. fish fillets
1/2 tsp salt, dash of pepper
2 tbsp. finely chopped onions
2 tbsp. minced fresh parsley
1 med. tomato, chopped
1/2 c. shredded cheddar cheese

Melt butter in skillet. Add fillets turning to coat all sides. Season with salt and pepper, sprinkle onions and parsley over fillets, top with tomatoes. Cover skillet and cook on low heat 7-9 minutes. Sprinkle cheese over tomatoes and continue cooking, covered, for 1-2 minutes or until fish flakes when lifted with a fork.

To Microwave: Using microwave safe container, microwave 4-5 minutes. High power in the first step. Add cheese and continue microwaving about 30 seconds. Let stand a minute or 2 before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
