MEXICAN LASAGNA 
1 1/2 lb. ground beef
1 1/2 tsp. cumin
1 tbsp. chili powder
1/4 tsp. garlic powder
1/4 tsp. red pepper
1 tsp. salt
1 tsp. pepper
1 (16 oz.) can tomatoes
10-12 tortillas
2 c. cottage cheese
1 c. Monterey Jack with peppers
1 egg
1/2 c. cheddar cheese
2 c. shredded lettuce
1/2 c. chopped onion
1/4 c. chopped olives
3 green onions

Brown ground beef, drain. Add cumin, chili, garlic, pepper, salt, red pepper, and tomatoes. Cover bottom and sides of 13 x 9 inch pan with tortillas. Pour beef mixture over tortillas add second layer of tortillas. Combine cottage cheese, drained, Jack cheese, and egg and pour over tortillas. Bake at 350 degrees for 30 minutes. Remove and sprinkle with cheddar cheese, lettuce, tomatoes, olives, and onions.
