HAMBURGER CASSEROLE 
1 1/2 lbs. lean hamburger
2 (16 oz.) cans sm. peas
2 (10 3/4 oz.) cans tomato soup
6 to 8 med. potatoes, cooked and mashed
1 sm. onion, chopped (if desired)
1 egg, beaten

Preheat oven to 400 degrees. Saute hamburger and onion until done. Add salt and pepper to taste. Drain and place in 2 1/2 to 3 quart casserole. Place 2 cans soup (undiluted) on top of this. Arrange drained peas on this. Stir 1 beaten egg into potatoes and place on top of peas. Sprinkle parsley on finished dish, if desired. Bake at 400 degrees for 20 minutes, covered, then bake at 350 degrees for 20 minutes, uncovered. Increase ingredients as needed. Can be made ahead and refrigerated - increase oven time.
