FRESH PEAR CAKE 
4 c. fresh pears, chopped fine
1 c. chopped pecans
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
3 eggs, beaten
2 c. sugar
3 c. plain flour
2 tsp. cinnamon
1 1/2 c. Wesson oil
1 tsp. vanilla

Combine pears, sugar and nuts, let stand one hour. Add dry ingredients to pears. Fold in well. Add oil, eggs and vanilla. Mix with wooden spoon, or by hand. Pour in tube pan and bake 1 hour and 15 minutes at 350 degrees.

ICING:

Mix a little powdered sugar and milk together. Punch holes in cake and let run down in cake. Then put a little on top - freezes real well. Very moist.

This cake is delicious! To make it a little healthier, I used less than 1 cup oil (the moisture from the apples made up for a little of the lost oil) and substituted 1/2 cup applesauce for the other 1/2 cup of oil. I also substituted white wheat flour for its whole grain benefits, and I cut down the sugar to 1 1/2 cups substituting turbinado for white sugar. It turned out moist, not too heavy and plenty sweet!
