APPLE AND NUT CAKE 
1 tsp. vanilla
3 whole eggs
1 c. Crisco oil
1 3/4 c. sugar
2 c. sifted flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
2 c. grated apples
1 c. chopped nuts

Sift flour, salt, baking soda, and cinnamon. Fold in 2 cups grated apples and 1 cup chopped nuts.

Save 1/4 cup nuts out of nuts out of batter and sprinkle on top of raw batter and also dust with powdered sugar. This gives cake a nice crunchy top. Pour into greased and floured 9 x 13 inch pan. Bake at 350 degrees for 40 minutes or more.
