LEMON SQUARES 
Crust:

1 c. all-purpose flour
1/2 c. (1 stick) butter
1/4 c. confectioners' sugar

Sift flour and confectioners' sugar together. Add butter; blend thoroughly. Press evenly into 8x8x2-inch pan. Bake 20 minutes at 350°F.

Filling:

2 eggs
1 c. sugar
1/2 tsp. baking powder
1/4 tsp. salt
2 tbsp. lemon juice

Beat all ingredients together with a fork. Pour over baked crust and bake at 350°F for 20-25 minutes more. Do not overbake! The filling puffs during baking but flattens when cooled. While still warm, run knife around edge to loosen from pan.

Makes 16 squares.
