LEMON SQUARES 
1 (9 x 13 inch) pan
2 c. flour
1 c. softened butter (or 1/2-1/2 butter and butter)
1/2 c. powdered sugar

Blend all ingredients with mixer and press into pan. Bake 20 minutes at 350 degrees.

FOR THE TOPPING:

4 lightly fork-beaten eggs
1 1/2 c. sugar
1 tsp. baking powder
1/2 tsp. salt
1/4 c. lemon juice
Rind of at least one lemon
Some confectioners' sugar

Whisk all ingredients, and pour over half-baked crust.

Put pan back in oven for another 20 minutes, no longer. When baked, sprinkle with confectioners' sugar and cut in squares.
