MEXICAN CHICKEN CASSEROLE 
3 lbs. chicken, cut up
2 tbsp. cooking oil
1 (7 oz.) bottle taco sauce
1/2 c. water
1 tsp. salt
1/2 tsp. oregano
1/4 tsp. minced garlic
2 c. shredded Cheddar cheese

Heat oil in skillet; cook chicken until brown. Drain fat. Mix taco sauce, water, salt, oregano, garlic, and onion. Pour over chicken. Reduce heat; cover and simmer 30 minutes or until chicken is tender. Place chicken in baking pan, 9 x 9 x 2 inch. Cool; sprinkle with cheese and refrigerate 8 hours. Heat oven to 400 degrees. Bake, uncovered, 40 minutes, removing cover last 20 minutes.
