FRESH APPLE CAKE 
2 c. sugar
3 eggs, beaten
1 c. vegetable oil
3 c. apples, peeled and diced
3 c. all purpose flour
1/4 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. allspice
2 tsp. vanilla extract
1 c. pecans, chopped

Pour sugar over apples and let set for about 30 minutes. Mix in oil, eggs, flour, baking soda, salt, spices, and flour. Add pecans and mix well.

Bake in a greased floured bundt pan at 325°F for 1-1/2 hours.

Cooks Tip: You can substitute pears instead of using apples.
