HOT PEPPER JELLY | |
2 c. green peppers, coarsely cut (about 1/2 inch square pieces) 5 1/2 oz. fresh jalapeno peppers 1 1/2 c. cider or white vinegar 5 1/2 c. sugar Green food coloring 1 (2 pouches) pkg. liquid pectin Place coarsely cut bell peppers in work bowl of food processor fitted with steel blade. Wash and remove stems from jalapeno peppers and cut in halves. Remove seeds and membranes. (Use rubber gloves if your skin is sensitive.) Place in food processor bowl with bell pepper. Whirl until peppers are ground almost to mush. (If you don't have a processor, put all peppers through a food grinder.) Place ground peppers in a large kettle. Add vinegar and sugar. Bring to a boil for 5 minutes. Add green food coloring until mixture is a pretty green color. |
