APPLE HARVEST CAKE 
4 c. coarsely chopped apple
2 c. sugar
2 eggs
1/2 c. oil
2 tsp. vanilla
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 c. chopped nuts

Combine apples and sugar. Let stand. In another bowl, beat eggs slightly, beat in oil and vanilla. Mix and sift flour, baking soda, cinnamon and salt. Stir into egg mixture alternately with apples and sugar mixture. Stir in walnuts. Pour into greased and floured oblong 13"x9"x2" pan. Bake at 350 degrees for 1 hour or until cake tests done. Let stand in pan until cool. Frost with Lemon Butter Frosting.

LEMON BUTTER FROSTING:

4 tbsp. butter
3 c. confectionery sugar
1-2 tbsp. lemon juice
Few grains salt

Cream butter and sugar gradually. Add in lemon juice to spreading consistency. Beat in salt.
