TOMATO, SAUSAGE POLENTA 
1 med. onion, chopped
1 clove garlic, crushed
1/2 lb. pork sausage
1 can (16 oz.) tomatoes
1 can (8 oz.) tomato sauce
1/2 tsp. oregano
1/4 tsp. salt
1/2 c. flour
1/2 c. cornmeal
1/2 c. Parmesan cheese
2 tbsp. sugar
2 tsp. baking powder
1/4 tsp. salt
1 med. egg
1/2 c. milk
2 tbsp. vegetable oil
1 c. shredded cheddar cheese

Brown onion, garlic, sausage until sausage shows no pink. Add tomatoes, tomato sauce, oregano and salt. Simmer, uncovered, for 5 minutes. Set aside.

In a bowl stir together Parmesan cheese, flour, cornmeal, sugar, baking powder and salt. Mix together egg, milk and oil. Stir into dry ingredients. Pour in 9 x 13 inch pan. Carefully pour tomato mixture over batter. Top with shredded cheese. Bake at 400 degrees for 20 to 25 minutes. Serves 6.
