HOLIDAY MEXICAN FRUIT CAKE 
1 c. sugar
2 c. flour
2 tsp. baking soda
1 (19 oz.) can crushed pineapple (in heavy syrup)
2 eggs (beaten)
1 c. chopped walnuts (optional)

Combine all ingredients in large bowl. Mix well, using an electric mixer. Pour into a greased and floured 9x13 inch pan. Bake at 350 degrees for 35-40 minutes or until done. Frost hot or cooled cake with Fruit Cake Frosting.

FRUIT CAKE FROSTING:

1/4 c. butter
1 (8 oz.) pkg. cream cheese (softened)
1 1/2 to 2 c. powdered sugar
1 tsp. vanilla
Milk

Blend butter and cream cheese together. Add powdered sugar and vanilla. Mix in enough milk to make a thin frosting.
