SCALLOPED POTATOES AND HAM | |
4 med. potatoes, cooked and peeled 1 sm. onion, chopped 1 sm. green pepper, chopped (optional) 3 tsp. butter 2 tsp. flour (level) 1 1/2 c. milk 6 oz. cheddar cheese, shredded (1 1/2 c.) 8 oz. cooked ham in 1/2 inch pieces Salt and pepper to taste 1/4 tsp. dry mustard 1 c. potato chips, crushed Cook onion and pepper in butter until soft. Blend in flour, stirring constantly. Add milk and seasonings and cool until smooth and thickened. Stir. Add cheese and remove from fire. Slice potatoes 1/4 inch thick and put in 1 1/2 quart baking dish and cover with ham, then the sauce. Cover with finely crushed potato chips and bake at 350 degrees for about 30 minutes. Serves 6. 355 calories per serving. |
