WILTED SPINACH SALAD 
1 lb. fresh spinach
4 green onions, chopped
6 slices bacon, diced
1 clove garlic, minced
2 tbsp. lemon juice
1 tsp. sugar
1 tbsp. vinegar
Salt & pepper
1/4 c. Parmesan cheese
2 eggs, hard cooked

Remove stems, wash spinach and mix with onions and pepper. Cover and refrigerate. At serving time, fry bacon until crisp, add garlic, lemon juice, sugar, vinegar and salt and pepper. Add spinach and toss until coated and slightly wilted. Transfer to a serving dish, sprinkle with cheese and garnish with egg slices.
