LAYERED MIXED VEGETABLE SALAD 
1 head lettuce, finely chopped
1/2 c. chopped green or red onion
1/2 c. (1 stalk) chopped celery
1/2 c. (1 sm.) chopped green pepper
1 1/2 c. (7 oz.) uncooked frozen peas, drained
1 c. mayonnaise or Miracle Whip
2 tbsp. sugar
2 pkgs. (4 oz. each) shredded cheddar cheese
1/2 c. imitation bacon bits or 10 slices fried, crumbled bacon
8 oz. can water chestnuts, drained and sliced

In large bowl, layer lettuce, onion, celery, green pepper and peas, spooning mayonnaise on each layer. Sprinkle sugar, cheese and bacon on top. Cover and refrigerate at least 8 hours. Add water chestnuts and toss just before serving. TIP: Grated Romano and Parmesan cheese may be substituted for cheddar cheese. Makes 10 to 12 servings.
