PECAN CHICKEN 
4 chicken breast halves, skinned & boned
1/4 c. honey
1/4 c. Dijon mustard
1 c. finely chopped pecans

Place each piece of chicken between 2 sheets of waxed paper. Flatten chicken to 1/4" thickness using a meat mallet or rolling pin; set aside.

Combine honey and mustard. Coat chicken in mixture and dredge in pecans. Spray baking dish with Pam. Bake chicken at 350 degrees for 30 minutes or until tender.
