ANY KIND OF FISH 
1 to 2 lb. fish fillets or fish steaks
2 cloves crushed garlic
1/3 c. olive oil
3 tbsp. lemon juice
2 tsp. dijon mustard
Salt and pepper

Step 1: Put fish in glass or ceramic bowl and add all ingredients. Stir until fish is coated.

Step 2: Cover and put in refrigerator. (Fish may marinate for 5 minutes or longer).

Step 3: Heat large skillet.

Step 4: When skillet is hot add fish and pour marinade in stir.

Step 5: Cover, stirring often.

Step 6: If fish gets dry, add a splash of white wine or lemon juice. Cook until done, 10 to 15 minutes.
