BACON AND CHEESE MUFFINS 
1 1/2 c. all purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
10 slices bacon, cooked and crumbled
1/2 c. (2 oz.) shredded cheddar cheese
1/2 tsp. chopped fresh parsley
1 egg, beaten
3/4 c. milk
1/3 c. vegetable oil

Combine first 7 ingredients in a large bowl. Make a well in center of mixture. Combine egg, milk and oil. Add to the ingredients. Stir until moistened, spoon into greased muffin pans about 3/4 full. Bake at 400 degrees about 20 minutes. Makes 1 dozen.
