CHOCOLATE COVERED CHERRY
DELIGHTS
 
1 c. melted butter
2 c. white sugar
2 eggs
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. vanilla
1 c. cocoa powder
3 c. flour
2 small (10 oz.) jars maraschino cherries
1 (6 oz.) pkg. chocolate chips
1/2 c. condensed sweetened milk

Melt butter and mix in sugar. Let mixture cool and add egg. Mix thoroughly and then add baking powder, baking soda, salt, vanilla and cocoa, stirring after each addition. Add flour and mix well. Dough will be stiff and a bit crumbly. Drain cherries and reserve juice. Pat dough into balls with your fingers. Place on greased cookie sheet. Press down in center with your thumb to make a deep indentation. Place one cherry on each indentation. In saucepan over simmering water (double boiler), combine chocolate chips and condensed milk. Heat on low heat until chips are melted. Add approximately 1/8 cup reserved cherry juice and stir to thick sauce. Spoon sauce over center of each cookie, just enough to cover each cherry.

Bake at 350°F for 10 to 12 minutes. Let cool on cookie sheet for 2 minutes, then remove to rack to finish cooling.
