CHICKEN ENCHILLADO'S 
1 chicken (cooked and diced)
1 stick butter
1/4 c. flour
2 c. chicken broth
1 can green chilies
1 (8 oz.) carton sour cream
1 pkg. (8 oz.) Monterey Jack or Mozzarella cheese
Flour tortillas (Azteca 10 inch)

Boil chicken, bone and dice. Melt one stick of butter with 1/4 cup flour. Add 2 cups chicken broth, and cook until thickened.

To this add one can green chilies and one 8 oz. carton sour cream. Grate cheese. Add grated cheese to chicken.

Place 1/2 cup (about) in flour tortillas and roll up. Place rolled tortillas in buttered baking dish. Pour sauce on top and bake at 350 degrees for 30-45 minutes.

Note: Mix some sauce with the cheese and chicken. When dish is full of rolled up tortillas, pour remaining sauce over top.
