BEST NEEDHAMS 
3/4 c. mashed potatoes
1/2 tsp. salt
2 lb. confectioners sugar
1 stick butter
1/2 cake paraffin
1/2 lb. flaked coconut
2 tsp. vanilla
12 oz. chocolate bits
4 squares unsweetened chocolate

Add salt to mashed potatoes. Melt butter in double boiler, add potato, confectioners sugar, coconut and vanilla. Mix well then spread evenly in a buttered jelly roll pan. Place in a cool place to harden. When hard, cut into squares and dip in chocolate mixture.

In double boiler, melt paraffin, add chocolate bits and unsweetened chocolate. Allow to melt and mix well. Toothpick or cake tester may be used to dip squares. Hold each square so it drains well. Place on pan lined with wax paper to harden.
