FRESH APPLE CAKE 
Cake:

2 c. all-purpose flour
2 c. sugar
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1 1/2 c. vegetable oil
4 eggs
2 1/2 c. apples, cored, peeled and grated

Icing:

2 (8 oz. ea.) pkgs. cream cheese, softened
1/2 c. (1 stick) butter
4 tsp. vanilla
2 (1 lb. ea.) boxes powdered sugar
1 1/2 c. nuts

Sift dry ingredients together. Add oil, eggs and apples. Pour batter into 3 round 9-inch pans.

Bake at 350°F for 30 minutes.
