PUMPKIN PUDDING CAKE 
1 2/3 c. sifted flour
1 1/3 c. sugar
1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/3 c. shortening
1 c. canned pumpkin
2/3 c. raisins
1/3 c. water
1 egg
1/4 tsp. ginger
1/3 c. walnuts

Mix dry ingredients. Add shortening, pumpkin and water. Beat for 2 minutes. Add egg and beat 2 minutes more. Stir in raisins and nuts. Turn into a 1 1/2 quart ring mold that has been well greased and dusted with fine bread crumbs. Bake at 350 degrees for 45 minutes.
