FOR BEET LOVERS ONLY 
1 pkg. (3 oz.) orange or lemon flavored gelatin
1 1/2 c. grapefruit juice
1/2 c. beet juice
1 can or jar (15 oz. or 16 oz.) diced beets (drained SAVE LIQUID)
1/2 c. sliced celery
Salad greens
Your favorite dressing

Dissolve gelatin in boiling grapefruit juice. Add 1/2 cup liquid drained from beets; cover and refrigerate until partially thickened.

Stir drained beets and celery into partially thickened gelatin. Pour into 1- quart mold. Cover; refrigerate until firm.

Unmold onto serving plate, garnish with salad greens. Serve with your favorite dressing.
