1 pound cranberries or other berries (frozen is fine) 2 cups of water 1 cup sugar (less if berries are not very tart) 2 tbsp. cornstarch 2 tbsp. orange juice Whipped cream for garnish Combine water, berries, and sugar in a saucepan. Simmer until the berries pop or softened. Puree the berries in a food mill or processor. If you want to remove the seeds, strain the puree through with a sieve. Return the puree to the saucepan. Mix the cornstarch and orange juice, add to the puree. Cook over low heat, stirring frequently for about 5 minutes until thickened. Chill and serve with whipped cream. |
