NAN'S CHEESECAKE 
CRUST:

1 1/2 c. graham cracker crumbs
1/3 c. butter (melted)
1/4 c. sugar

Mix ingredients; press on bottom and sides of 8 or 9-inch springform pan.

FILLING:

2 (8 oz.) pkgs. cream cheese
3 eggs, separated
3 tbsp. flour
1/2 tsp. salt
2/3 c. evaporated milk
1 tsp. vanilla
3/4 c. sugar

Beat cream cheese and egg yolks; mix well. Add 1/2 cup sugar, flour, and salt; blend well. Beat in vanilla and milk; set aside.

Beat egg whites until foamy, but not dry; add 1/4 sugar - beat until stiff but not dry. Blend with cream cheese mixture.

Pour into pan. Bake in preheated 325 degree oven for 50 minutes. Check after 40 minutes. Electric ovens seem to cook faster than gas ovens.
