CALIFORNIA PECAN BREAD 
3 c. all-purpose flour
1 1/2 c. coarsely chopped pecans
4 tsp. baking powder
1 tsp. salt
3/4 c. shortening
1 egg, beaten
1 c. granulated sugar
1 1/2 c. milk
1 tsp. vanilla

Into mixing bowl sift flour with sugar, baking powder and salt. Cut in shortening. Stir in 1 1/4 cups of the pecans. Add egg, milk and vanilla. Mix just until ingredients are blended. Turn into greased and floured 9 x 5-inch loaf pan. Sprinkle remaining 1/4 cup pecans over top. Bake at 350 degrees for 60 to 70 minutes or until loaf tests done. Let stand in pan 10 minutes. Turn out onto wire rack to cool. Makes 1 loaf.
