CHICKEN AND DUMPLINGS | |
1 whole chicken Water Salt Pepper Self-rising flour Place chicken in large stew pot. Cover with water. Add salt and pepper to taste. Bring water to a boil and then turn down and simmer until tender, 45 minutes to 1 hour. In medium bowl, put 1 1/2 cups of self-rising flour. Add to the flour fat skimmed from the top of the chicken water. Add enough hot water to make a dough. When the chicken is done, take out of water to cool until cool enough to take meat off bones. Put meat back into pot. Roll out dough and cut into little squares (about 1 inch square) and coat with flour. Add a few at a time to the water and chicken. Keep adding dumplings until top of water is full of dumplings. Cook and stir until thickens. Serves 10. |
