UNDER THE SEA PEAR SALAD 
8 oz. cream cheese, softened
1/4 tsp. ginger
1 (6 oz.) box Jello (strawberry or lime preferred)
1 c. boiling water
1/2 c. cold water
16 oz. can chilled pears in syrup
1 tsp. lemon juice

Dissolve gelatin in boiling water. Stir in pear syrup and lemon juice. Add 1/2 cup of cold water. Set aside.

Blend ginger into cream cheese until smooth. Add half of the gelatin mixture until smooth and creamy. Set the other half of gelatin aside.

Stir chopped pears into gelatin/cream cheese mixture. Spoon into gelatin mold. (If using a Tupperware mold, grease sides of mold with vegetable oil before spooning gelatin into mold.) Allow to chill for 1 hour.

After this is nearly set, spoon remaining gelatin on top of pear mixture. Allow to set for at least 3 hours. Serve on top of lettuce leaves.
