LITTLE JAPANESE FRIED CAKES 
1 c. flour
1 tsp. baking soda
1/2 c. water
Oil for deep frying

Mix flour and soda in a large bowl, add water a little at a time to make a soft dough. Shape into a flat cake on lightly floured board and cut dough into tiny little "fingers" and place on a greased pan.

Heat 3 inches oil in a saucepot, deep fry and remove. Drain and set aside.

BASIC SYRUP FOR FRIED CAKES:

1 c. water
3 c. sugar

Put sugar and water in heavy saucepan and place over medium heat. Cook until slightly thick. When syrup is hot, add fried cakes a little at a time and stir slowly to coat with syrup. For a sweeter flavor, re-dip the cakes. Serve cool.
