UNBAKED CARAMEL COOKIES 
2 c. sugar
3/4 c. butter
1 (6 oz.) can evaporated milk
1 pkg. instant butterscotch pudding mix
3 1/2 c. quick cooking oats

Combine sugar, butter and evaporated milk. Stir over low heat until mixture comes to a full boil. Remove from heat and add pudding mix and oatmeal. Stir thoroughly. Cool 15 minutes, then drop by rounded teaspoons onto waxed paper.

I was trying to find this recipe. My mom used to make them, and I had lost the recipe for this version. In addition to butterscotch pudding, it is also very good with chocolate pudding. Next time I make them I'm going to try them with mint chocolate, white chocolate, or chocolate fudge instant pudding mix.
