GRANNY YEARY'S LEEK SOUP 
3 leeks, cut in 1/4 inch slices
1 onion, diced
3 to 4 Irish potatoes, peeled & diced
4 to 5 c. chicken broth
1 to 2 tbsp. of fresh butter (butter of choice may be substituted)
1/2 tsp. salt (salt substitute may be used)
Black pepper or pepper medley
1 c. sour cream or 35% whole cream
