HACHI HACHI CORN AND CABBAGE
SALAD
 
16 oz. tri-color cole slaw mix
16 oz. can yellow corn
small yellow onion, diced
1 orange, sections and juice
small can of diced jalapeno peppers or green chiles
2 tablespoons olive oil
1/4 cup rice vinegar
1/4 cup white sugar
1/4 teaspoon salt
1/4 teaspoon pepper

Mix ingredients, chill and serve. Based on a dish served in Royal Host restaurants in Japan. Perfect with fish and seafood!
