2 c. white beans
1/3 c. olive oil
1 lg. onion
1 clove garlic
2 tomatoes, peeled & cut up
8 c. boiling water
2 bay leaves
Juice of 1 lemon or 2 tbsp. real lemon
1 tbsp. fresh parsley, cut up

Salt to taste, after beans are done.
